Mandarin Marmalade Cake




Resepi asal kek yang mengunakan grapefruit tapi saya telah tukar kepada mandarin orange memandangkan saya mempunyai mandrin marmalade yang saya buat tempohari masih berbotol dalam petisejuk. Nak letak atas roti agak jemu bila di jadikan begini laju sekejap saja kek nie habis separuh. 
Saya suka makan kek ini semasa ianya suam suam dan di gandingkan pula dengan secawan teh o mmmmp memang berbaloi membuatnya.

Mandarin /Grapefruit Marmalade Cake

3/4 cup sugar
3 eggs
3/4 cup unsalted butter
6 oz. grapefruit marmalade - I change to Mandarin orange
1 tsp vanilla
1 tsp ground ginger
1 1/2 cup AP flour - saya guna tepung gandum
1 tsp baking powder
1 tsp salt

Preheat the oven to 350F. Grease and flour a loaf pan. Cream together the butter and sugar until light and fluffy, then add the eggs one at time, fully incorporating each one and scraping down the bowl in between additions. Beat in the marmalade and vanilla. Combine all the dry ingredients in a bowl and whisk to combine, then add it to the batter and mix until incorporated. Pour into the prepared pan and bake for 45-60 minutes, until a toothpick inserted in the middle comes out clean. Cool slightly in the pan, then turn out on a rack to finish cooling.
